I really get tired of seeing "recipes" on diet sites and blogs in the link areas--so welcome to my "Yummy Dishes" page!

SMOOTHIES
Blueberry Banana Smoothie
1C blueberries, 1 banana, 1-1 1/2 c vanilla or plain soymilk, a bit of ice. Blend and enjoy!

WRAPS
Breakfast Burrito Sans Cheese
1 whole wheat tortilla, 2 eggs or 4 egg whites (scrambled), onions (diced), green pepper (diced), 1 small to medium potato (diced), salsa
I prefer not to use butter or cooking spray when "frying", so I use just enough olive oil to cover the bottom of the pan. Fry your onions, peppers and potatoes together on medium heat until the taters are soft. Use a cover in between stirring to lessen cooking time. Add in eggs when the potatoes are ready. Just prior to the eggs being thoroughly cooked, put your tortilla in the microwave on high for 30 seconds. Remove tortilla, add your "fried" goods and some salsa, wrap it up with love and munch away. :-)

VEGAN/VEGETARIAN
Acorn Squash Supreme- From Eat to Live: A Revolutionary New Formula for Fast and Sustained Weight Loss by Dr. Joel Fuhrman.
One acorn squash
1 Apricot (his recipe calls for dehydrated, but I used fresh)
1 small can of unsweetened pineapple (you do not use the juice)
1 package of raisins
2 tbs of crushed raw cashews
Cinnamon
Oven temperature-350
Cut the acorn squash in half and remove seeds. Fill a casserole dish with about half an inch of water and place both halves, flesh side down, in the dish. Cover and bake for 45 minutes.
While the squash is cooking, mix up the rest of your ingredients in a bowl and set aside.
Remove squash from oven and turn each half. Fill the center of both halves with the ingredients from your bowl. Cover and bake for 25 minutes.
Remove, sprinkle cinnamon on top and bake 5 more minutes.

I had a really YUMMO salad tonite for supper--thought I would share!
I made a large green sald and added my favorites (Cucumbers and purple onion) THEN topped it with leftover Extra Lean Portabello Flavored Pork tenderloin. Added fat free Catalina--
IT WAS WONDERFUL!!!!!!!!!!!!!!!!!!!!!!!!
